06-08 Chicken Tacos

This was our "Blazing Saddles" meal. ;-)  I got this recipe from a mom in our homeschool group.  Loved it the first time we had it so I made it again.  Easy to make and I love that I could make it in the crock pot.  Lucy's recipe called for 3 chicken breasts in the bottom of the pot but I had 5 so I used them all.  Also a package of taco seasoning, I should have used two but it was still good.  Then I topped that with a large can of black beans and a large can of ranch style beans.  I left the pot on low all day.  When done I shredded the chicken and mixed it all together. I added my favorite side dish with Mexican meals, Rice a Roni Spanish Rice.


We had hard taco shells and flour tortillas, most of my family prefers flour tortillas.  But here is all the toppings we used.  I like simple and plain so I just used cheese, lettuce, and sour cream.  Usually I would have added chips to my plate but I wasn't that hungry so I skipped em.

06-03 Sunday Lunch

We had some left over spaghetti so that is what I chose to eat for lunch Sunday.  Then.  I saw......hot dogs.  I wondered if the two would be good together.  AND THEN I thought of Sheldon Cooper. (Big Bang Theory) And yes I did.  I cut up the hot dog and put it on top.  It was pretty good. =)


06-02 Coffee

My Saturday morning coffee had sweet cream creamer in it and some yummy whip cream on top. =)

05-03 Newtons!!

Did you know that Fig Newtons have been around for 100 years?  Did you also know that they have a new name?  NEWTONS.  That's it. Just Newtons.  After listening to K-Love talk about this several times today I had to go buy some!

04-15 Grilled Cheese, Cheese Burgers

Yep, we did it.  Made it as low calorie as possible but it was still about 700 calories each.  It's a burger between two grilled cheese sandwiches.  Yes, I made 8 grilled cheese sandwiches. Fun.  It was delicious!  You must try it but, be real hungry first.  Mic had to take the top off hers.  Said her mouth wasn't big enough.  That was hard to believe.  ;-)

03-21 Lunch

Michaela fixed little pizza's for lunch today.  She used an English muffin sliced in half, spread some pizza sauce on it, a few peperoni's, and then mozzarella on top. And we must not forget the ranch to dip the pizza in.  Mic cooks hers in the microwave for a bit and I like to heat mine in the toaster oven.

02-02 Baking

Last week I received a bag of starter dough from someone at work.  It's called Amish Friendship Bread.  Yesterday was baking day.  I had two bags of the starter so I got to make 4 loafs of bread.  The first two were the original recipe, cinnamon bread.  The second two I made into Lemon bread.  Currently I still have 4 bags of starter is anyone is interested.  I have learned that it can be frozen to use at a later date.

Cinnamon bread was yummy. Crusty on the top because I didn't dust the top with sugar and cinnamon. I poured. ;-p


The Lemon bread kinda stuck to the pan but you can see all the poppy seeds! :-D  And again, I should have dusted the sugar on the top but you can never have too much sugar!

01-30 Potato Night

Every Monday night for the past many years, not sure exactly how long, Monday night has been potato night.  I love Monday night because I don't have to fret over the big question, "What's for supper?"  Gabriel's favorite food is potatoes. Mic...not so much.  On Monday nights she eats chicken or hot dogs.  I tried to get her to eat them at the age of 2 but she wasn't having any of it.  So, on Monday nights I fix baked potatoes in the oven or, to get them done faster, I cook them in my Pampered Chef Baker in the microwave.  The boys add cheese, sour cream, and ham to the top of their potato. Sometimes I do the same but other times I'll do chili and cheese instead.  Tonight I added a can of  Campbell's Fiesta Nacho Cheese to the chili. Yum!

01-18 Popcornopolis

Yes we did make a 1 1/2 hour trip for this popcorn.  Okay, we did some other things too but I made sure to get more of this yummy caramel popcorn!  Brian's favorite is cheese.  The closest Popcornopolis store is at Barton Creek Mall on the other side of Austin from us.  It took about 30 min. to get there and a little over and hour to get home during rush hour. SO worth it. =D

01-10 Crabby Patties

First, Happy 10th birthday to my nephew Jesse. Love ya!

Today's picture is of our "different" supper.  We tried crabby patties (crab cakes), and veggie burgers.  I have to admit that I was NOT wanting to try to crab cakes but, they weren't as fishy tasting as I expected. Mic said they tasted like stuffing.  Gabe did not like the veggie burgers.  Mic kept saying "Kids just don't like vegetables no matter how you make 'em."  And then the homemade fries. Those were a little more crispy than usual. Oops.

01-01 Church & Cupcakes

Happy New Year!!

Ok, so I said a photo-a-day but I had to do two for today because I couldn't pick just one.  
We started the first day of the year at Westside Church of Christ where we attend regularly.  Usually there are two services, last Sunday and today there was just one service.  We got there late and had to sit so far in the back we were past the kitchen area. Brian said, "This is where you have to sit when you have two girls who can't get up and get ready on time."  We could never do the 8:30 service.

This afternoon Michaela finally got to make her cupcakes.  She has been asking me for a while to make a recipe that she got out of one of her books. She made vanilla cupcakes with vanilla buttercream frosting.  The book is called Mia in the Mix, from the Cupcake Diaries by Coco Simon.  We were all surprised that she didn't make pink frosting.  She said she wanted them to be likable by everyone.
